Muffins seem to be a regular fixture in our house these days. Apparently, when you have a child with teeth, who discovers the joys of solid foods, you actually have to feed them like 5 times per day!! Who knew?! So during the little one’s afternoon nap, I have been spending a quick second in the kitchen whipping up a dozen or so snacks that are the perfect size for little chubby hands to grab. The Spinach Muffins were such a hit that they seemed to disappear in a matter of minutes which left me yet again snack-less and with a cranky baby. It’s back in the kitchen me!
Cue the banana prune muffin. Baby tummy satisfied and the household is happy again. Let’s hope these last at least one hour this time around!
What You Will Need
1 cup mashed bananas
1/2 cup sugar
1/4 cup vegetable oil
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 cup chopped and pitted prunes
Preheat oven to 350* and grease muffin tins
Mix the sugar, oil, egg and vanilla and blend in banana. In a separate bowl, combine flour, baking powder, baking soda, salt and cinnamon. Incorporate dry ingredients into the egg mixture and stir. Add the prunes and scope into muffin tins.
Bake for 25 minutes until the center of the muffin is cooked through.
