Chocolate Chip Oatmeal Zucchini Cookies and One Big Birthday!


Today we are celebrating Everly’s 1st birthday! I can’t believe it’s been one whole year since this little blessing entered our lives and I haven’t regretted it for one second! Over the weekend we were lucky enough to get together with friends and family to celebrate the squirt with a flamingo themed pool party! Complete with water activities for all 20 kids in attendance and topped off with a special smash cake for the birthday girl! Normally I don’t let Everly eat too much sugar but the day was a special one so I let her go at it…for a few minutes that is! But who doesn’t love a yummy sweet treat now and then? And this is where our recipe for Chocolate Chip Oatmeal Zucchini Cookies comes in!

I whipped up this recipe up the other day when I wanted to make a little afternoon treat that was packed with the good stuff too. I added chia seeds, flax seeds, oatmeal, whole wheat flour and shredded zucchini to the batter and ended up a filling and delicious cookie that was a complete hit!

3/4 cup flour

3/4 cup whole wheat flour

1/4 tsp salt

1/2 baking soda

1 tbsp coco powder

1 tsp chia seeds

1 tbsp ground flax

1/2 cup butter softened

1/2 cup sugar

1/3  cup brown sugar

1 egg

1 tsp vanilla

1 cup oats

1 1/2 cup shredded zucchini

1 cup chocolate chips

Preheat oven to 350*

In your mixer, cream the butter and the sugars together and then add the egg and vanilla. Mix in the flours, salt, baking soda, chia seeds, flax, and coco powder. Then mix in the oats and zucchini and finally the chocolate chips.

Scoop dough into balls the size of a small golf ball and bake on a cookie sheet lined with parchment paper for 15-18 minutes until slightly golden brown. Let cool and transfer to cooling rack to cool completely.
