Cinnamon Sugar Pumpkin Muffins



Happy Thanksgiving everyone! I won’t talk too much as there is so much to do this morning! But I wish everyone a safe and wonderful day full of good company, good food and lots of joy! I leave you with this quick muffin recipe perfect with a hot cup of coffee while watching the Thanksgiving Day Parade and waiting on that delicious turkey! Lots of Love from my home to yours!




What You Will Need

1 and 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1/3 cup vegetable oil
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup pumpkin (puree, not the pie filling)
1/2 cup milk
3 tablespoons butter, melted
Cinnamon sugar

Preheat oven to 350*

Combine all dry ingredients (except the cinnamon sugar) and stir in the oil, egg, vanilla, milk and pumpkin until smooth and combined. Bake for 20 minutes until cooked through. Let cool and remove from muffin tins to let cool a bit more.

Dip muffins in melted butter then roll in the cinnamon sugar!
