St. Patricks Day Spinach Muffins


We have been on a bit of a muffin kick in the Petruno house these days thanks to our little Miss. This kid…she can EAT! Now, not only do I have to come up with meals for me and the hubby but I also have to come up with tasty treats and finger foods for the munchkin. Since she now has four teeth we have been experimenting with more solid texture foods and muffins seem to hit the spot lately. I ran across this recipe over at and have had them bookmarked for some time and since it’s St. Patricks Day what better time to bake up green muffins? They are super delish, very light and are definitely Everly approved!



What You Will Need

1/2 cup unsweetened applesauce

1 egg

2 tsp vanilla

1 cup fresh packed spinach

1/3 cup sugar

2 Tbsp vegetable oil

1 1/2 cup flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Preheat oven to 350*

Place the applesauce, egg, vanilla, spinach, sugar and oil in a blender or food processor and puree until the smooth is relatively smooth. Pour into a bowl and mix in the dry ingredients.

Scoop into muffin tins and bake for 17 minutes.
