Today my inner hippy comes out to you all…deep down I am crunchy. I have dreams of moving away from the suburbs, buying a few acres and living off the land. In this dream I am surrounded by my babies, making jam, canning tomatoes, sheering sheep and birthing lambs…okay…well that might be a bit of an exaggeration but I do try to live as “crunchy” as possible!
Speaking of crunchy…in an attempt to eliminate as many processed foods in our home as possible, I tried my hand at baking up some grain free snacks. I always assumed making crackers would be way too much work to bother with and I might as well just buy the organic ones at the market but you know what… it was a total breeze! The dough came together super quick and they turned out crispy and delicious!
Another DIY item to check off my “hippie” list! Maybe I WILL think about getting those sheep!
1 1/2 cups sunflower seeds
1/2 cup chia seeds
1/4 cup flax seeds
1 cup grated parmesan cheese
2 Tbsp minced fresh rosemary
1/2 tsp garlic powder
1/2 tsp baking powder
2 Tbsp melted butter
1/2 tsp salt plus a pinch or two more for topping
Preheat oven to 300*
Using a food processor, pulse the sunflower seeds, chia seeds, and flax seeds until they are finely crushed. You are aiming for a grainy flour consistency.
Pour in a mixing bowl and combine the rest of the ingredients until the dough comes together.
Lay the dough down on a piece of parchment paper and then lay another piece of parchment over the top of the dough. Use a rolling pin, roll the dough out between the paper until the dough is about 1/8 of an inch thick. Try to get the dough as even as possible.
Remove the top layer of parchment and slip your baking sheet under the lower sheet of paper.
Using a sharp knife, or pastry cutter, score the dough into desired cracker segments. Top with a couple pinches of salt and bake for 45 minutes.
Let cool completely and then break about along the cut lines. Store in an airtight container.
